Pumpkin Cake

This recipe is super easy, very moist and low-fat.

  • 1 box cake mix, any flavor (although I prefer spice)
  • 15 oz can packed pumpkin (not pumpkin pie mix!)
  • 1 cup water

Mix it all together.  Lumps are ok!  Bake as directed on the box.  That's it!

I've served it with fresh fruit, fruit spreads and sometimes the below frosting substitute.

  • Small container sugar-Free Cool Whip
  • 1 TBSP sugar-free cocoa drink mix or chai

Mix together.  Refrigerate.  Dollop on top of the cake.
