Kickass Guacamole
I made this up for the party. Even with the bacon, I'd say it's pretty good for you. Avocado is a great overall food. About 75% of an avocado's calories come from fat, most of which is monounsaturated fat. Avocados also have 60% more potassium than bananas. They are rich in B vitamins, as well as vitamin E and vitamin K. They have the highest fiber content of any fruit - including 75% insoluble and 25% soluble fiber.
Anyhow, on to to cookery.
Given the current season, I started with a pre-made guacamole, very basic, just avocado, some other minor ingredients. Good starting point for making something good. Like that blond lady on the food network, except w/out all the bubbly enthusiasm that makes normal people ill.
This recipe will make approx on crap ton of guacamole, so you'll probably want to trim it down.
5 packages of the premade-guac (theres 2 packages per box)
10-12 cherry tomatoes
1 red onion
1 jalapeno
1 clove garlic
1 lime
2-3 tablespoons of cumin
black pepper
5-6 strips of bacon
Start off by heating the oven to 400 degrees. Place the bacon on a wire rack in a sheet pan. Bake it 10-15 minutes or until its done.
Dice the onion fine. Seed, rib and dice the jalapeno. Or leave the seeds and the ribs in if you want it hotter. Zest the lime. You'll want to grate it, not peel it in strips. After the bacon is cooked, cut it into 1 inch pieces. Combine all the ingredients, and then juice the whole lime in and fold together. Let sit in the fridge for at least an hour.
If you want you can omit the bacon, but you'll probably want to add some salt to compensate for the salt the bacon contributes to the overall seasoning.
