Ithaca 5K Race/Funwalk

This past Saturday AOP Members Jason, Drew and myself attended the Cancer Resource Centers' Strength in Numbers Walkathon & 5K Run.  Super-supportive FOAP (Friend of At Our Pace) Mike B was also in attendance.  He ran in the 5K Race (approximately 3 miles).  Mike's girlfriend Heather didn't race as she's getting over being sick but she came along to cheer him on.

Jason vs. The Cold and/or Flu

I had a great start to the weekend.  I really did.  Friday night I had to finish Week 2 of the Couch To 5k running program.  I felt great after it.  A good workout, 90 seconds of running followed by 2 minutes of brisk walking, repeating that for 25 minutes or so.  I felt so good that I actually extended it by about 10 minutes.  I pushed it a little too far, as I was pretty sore from it, but I still felt great.  Quite a feat for a 332 pound 33 year old.  I was

Buffalo Chicken Salad

This started out as a recipe I found on the internet that I modified heavily to make it much healthier.  It tasted pretty damn great.  I'll include the original as a link at the end, if anyone wants the full-on version.

What you'll need:

3-4 Boneless Skinless Chicken Breast halves

1/2 Cup of Aldi's Fit n Active Reduced Fat Ranch Dressing

1/4 Cup of Crumbled Blue Cheese

Canola Oil

Old Bay Seasoning

2 TSP Corn Starch (optional)

2 TBSP Margarine

1/4 Cup Louisiana Hot Sauce

Pumpkin Cake

This recipe is super easy, very moist and low-fat.

  • 1 box cake mix, any flavor (although I prefer spice)
  • 15 oz can packed pumpkin (not pumpkin pie mix!)
  • 1 cup water

Mix it all together.  Lumps are ok!  Bake as directed on the box.  That's it!

I've served it with fresh fruit, fruit spreads and sometimes the below frosting substitute.

THE ART OF WEIGHING YOUR SELF

I don’t know about you but I had never thought of a scale in a positive light. This small trim little box that I step on from time to time so that it would spit out a number that helped me determine myself worth for the day.

I am a list fanatic.  Jason picks on me for this, but it's born into my very genetic code.  My father was a List Man.  He had lists for everything.  “20 Things To Do This Year”  “10 Things To Do In London”  “Top 15 Stupidest People This Year”  Stuff like that.

Beef and Squash Stew

Like most of my recipes, I dont measure things.  Also, the vast majority of the ingredients are interchangeable with similar items.

1-2 lbs of stew beef.  Or chicken.  Or lamb.  Or tofu, if you're into self flagellation.

1 butternut squash.  Or a couple acorn squash.  Or some other equivalent amount of squash.

1 onion.

2 ribs of celery.

Let's Get Physical

Alot of my posting has been about eating.  What to eat, how to eat, when to eat, etc.  I feel, honestly, that I have that bit under control.  I'm eating less at meals, only snacking about once a week, if that, and am making healthier choices about what to eat when I can.

My weight loss has slowed down some though.  Honestly, this week, I've gained.  So it's time to unbalance the equation again.
